Ranginak, an easy Iranian dessert

Ranginak is a Southern Iranian desert, originally from Shiraz. It is easy to make and the results are pretty, delicious, and healthy--a quick and nutritious dessert which goes really well with a cup of nice, dark, hot tea. A recipe I found here follows my personal recipe almost to a T! Here it is:

4 Servings

Dampokhtak

This is one of a variety of Iranian rice dishes which could be eaten as a vegetarian meal or with chicken or beef on the side. It is not that hard to make and again, its ingredients can keep for a long time, so it's a great meal to make when your refrigerator is empty. Dampokhtak is traditionally eaten with Torshi or Salad, not really needing anything else. It is mostly a winter meal because in the older times, when fresh vegetables were not available year-round, dried beans were used more frequently in the winter menu.

Kookoo Sibzamini

Today I will share another recipe which is delicious any day, but the easy ingredients and cooking instructions make it a quick dinner after a long day. It is also a vegetarian recipe. Note that my recipe doesn't call for shaping and frying individual Kookoo patties, the way cooks with more time can make and which is really the proper way of presenting this meal. My recipe is intended for easier and faster cooking, hence the different appearance.
