All day I was feeling tense about some of the tasks at hand, News (of more arrests/Tavvakoli's) in Iran and ostaad Payvar's death.
Tonight without thinking, I started chopping one big onion, 2 sweet potatoes, 4 yellow potatoes, 3 inches of fresh ginger. I sauteed, on medium heat, the cut vegetables (size does not matter - unless you need to have the soup ready in less time) and ginger in about 1/3 cup canola oil. I stirred often so veggies don't burn. Once they look a bit brown on the outside, i added 1 cup of chicken broth (if you're vegetarian then skip this) and 4 cups of water. With lid on let simmer for about 10 -15 minutes. Added salt and pepper to taste.
Using a ladle I transferred the soup (Don't burn your self!) into blender. Two ladles full at a time, blend/puree for 1-2 minutes. Pour in bowl and garnish with chopped parsley if you like.
Variations: You can replace one cup of water with milk or cream, depending on how rich you would like your soup. You might want to garnish with a table spoon of ground flaxseeds (like I do) to make it more omega 3-rich. I love the nutty flavor of crushed or ground flaxseeds.
You can even add chopped bacon or roasted almonds or pine nuts on the top. Or go for that olive oil swirl or drop a spoon of creme fraiche. Soups like this have unlimited potential!

by Monda on Sat Dec 12, 2009 07:44 AM PSTYou have done all that to your coffee?! I can never mess up with tastes like you do, but hey who's judging your taste buds and intentions :o)
Ginger is good for the immune system, I'm sure you know. I simply pour hot water over slices of fresh organic ginger and sweeten with honey, wait until it cools off a bit then drink it. Or I add fresh ginger slices to my green tea.
To me flax seeds are best if organic, dark and whole. I grind my flax at home. The darker the better, I say.
Thank you for reading.
Ginger.
by pedro on Fri Dec 11, 2009 04:19 PM PSTFor the past 6 month or so I've been drinking my cup of cofee, in it, I add a slice of ginger, a green tea bag, a stick of cinnamon, 1 spoon of honey and of course the cream for cofee. It tastes good and it should cover all bases.
BTW, there are several diffrent shades of Fleax seed out there, which is better?
I grind my Flax seed freshly. Seven, eight years ago I read in a health magazine that previously ground Flax seed is not as good, I am not sure but the word " loosing property " come to my mind.
Thanks Monda.
Organic Nutritionist jan, I love almond milk!
by Monda on Fri Dec 11, 2009 02:05 PM PSTas much as I love hazlenut milk and rice milk. As you know too much soy is not a good idea. Thanks for the links and look forward to your blog about soy.
Make almond milk at home though?! That would mean cutting down on my iranian.com addiction! :o)
Soy milk - Almond milk
by Organic NUTritionist on Fri Dec 11, 2009 01:50 PM PSTMonda jan,
I will answer you about the flaxseed in a couple of days. Flaxseed is best organic as is everything in my opinion. :)
Also, be careful with soy milk. I am going to do a blog on soy soon.
The best soy milk is organic, fermented, and non-GMO. Have you tried almond milk? Very nutritious and delicious and very easy to make at home: //www.ehow.com/video_2335290_almond-milk-recipes-healthy-fruit.html
Here is an article on soy you may want to read when you have time, it's very informative: //articles.mercola.com/sites/articles/archive/2008/09/04/why-soy-is-not-the-health-food-you-think-it-is.aspx

when you google them, let me know
by Monda on Fri Dec 11, 2009 01:26 PM PSTas far as I know, they have different properties, therefore not the same.
BTW ginger and ginseng are not related, are they?
by Anonymouse on Fri Dec 11, 2009 10:00 AM PSTEverything is sacred.
Fresh is always better than oil
by Monda on Fri Dec 11, 2009 09:57 AM PSTSince there's less processing involved. But yeah have pretty much exact same properties. If you buy a good quality flax seed oil, you're on the right track.
Same with garlic.
By huge amount of ginger I meant: If I were in your shoes, I wouldn't be drinking 2 cups of ginger tea (in winter) like I do. (My blood pressure is always low.)
Is ground flaxeed same as flaxeed oil?
by Anonymouse on Fri Dec 11, 2009 09:51 AM PSTI've been taking Flaxeed oil since Oranic jaan said it helps to reduce cholestrol. I think it has had some positive results since my borderline cholestrol is closer to the borderline. As long as it is going down and not up! If the ground is same as oil, I'll sprinkle it too.
Monda jaan I don't take a huge amount of ginger since by itself it is not that tasty, I actually don't like it too much but I may try to experiement with it. I don't have a blood pressure gadget to use for a test but I may just check my heartbeat before and then take massive amount of ginger (ala coneheads in SNL consuming massive amount of chicken embryos ;-) and see it the heart beats faster. If the experiment was noteworthy I'll blog about it ;-)
Everything is sacred.
Yes anonymous, ginger raises blood pressure
by Monda on Fri Dec 11, 2009 08:44 AM PSTIn Thai or Chinese cooking (or any recipe, really), the idea is to balance the effects of all the ingredients (basil, seafood, vegetables, lemon grass, etc.) If you already know that your blood pressure is higher than what it should be, then I would not experiment with eating a huge amount of ginger. Stick to your instincts, like anything else.
But if you do experiment, do blog about it.
I sprinkle ground flax on almost anything...
by Monda on Fri Dec 11, 2009 08:32 AM PSTTrying to keep at one table spoon a day though. It also tastes great on green salads.
I use soy milk in all my cooking at home. Outside I go nuts with cream and whole milk, people love it!
(Yes my cousin's story is only one of many I'm sure. I tried to contact those men about leaving their feedback on JJ's blog. I hope they comply with my wishes.)
mmm
by Organic NUTritionist on Fri Dec 11, 2009 07:56 AM PSTMonda Joon,
Sounds delicious. I will buy the ingredients today and make it. Thanks for sharing. I like that you can replace water for cream or milk. Also, the addition of GROUND flaxseed--as you know, you get more benefits from the ground than just the seeds.
Just wanted to say what you wrote about your cousin and his two friends in the "Be a Man" section was very sad and unbelievable.
Monda jaan cooking is very theraputic! Ginger is bad for blood?
by Anonymouse on Fri Dec 11, 2009 06:53 AM PSTWhat is this about ginger being bad for high blood pressure? I did not know that. Now I can't eat Thai food?! Ginger is the standard mix in many of the Thai and Chinese foods in general. I have high blood pressure somewhat but I like Thai and ginger.
Maybe I should have an experiment and have a lot of ginger and see what happens! Maybe I can get my blood pressure before and after and see the difference?!
Everything is sacred.
Stay away from ginger if you have high blood pressure
by Monda on Thu Dec 10, 2009 08:52 PM PSTUse garlic instead. (2-3 spoonfulls of garlic or ginger depending on your taste)
Let me remind you that grated parmesan, asiago or pecorino go very nicely on top this soup. Or crumbles of goat cheese if you are allergic to cow dairy.
