I have been having a craving for cow's tongue lately. I think it has something to do with being four months pregnant :o) Last time I had this delicious dish, I had just delivered baby number 1. My uncle made it for me and schlepped it all the way from Orange County to our home in Los Angeles where I proceeded to devour it before his astonished and somewhat fearful eyes. Which brings me to my question, for those of you who reside in the Los Angeles area: Where can I find good tongue? And please don't say "in the personal ads of LA Weekly." I get it, I get it. I was thinking persian markets but the two I frequent in the San Fernando Valley don't have it, as far as I could tell. Then I thought I might try Vallarta supermarkets as Mexicans are known to enjoy their cow's tongue as well. Or maybe even Costco although that seems doubtful. Definitely won't be able to find anything like that at the regular Ralph's or Vons, that's for sure. They hardly ever carry such "exotic" meats as lamb and veal for pete's sake! So, if you have any suggestions, let me know. I appreciate it and I do recognize this is kind of an odd request so if I don't get any guidance, I will understand...

I usually get them as a buritto. Ask for "lengua". They don't usually advertise it.

As for tongue's I don't know but I am sure in your condition you can even try Vanilla Icecream with Pickles and find it tasty ;0)

About where to find a good tongue: Honestly, I've never had one in my life, but per my hubby's advice (who is a tongue eater), it seems that Attari Deli in Westwood makes great tongue sandwiches...(it's next to Borders)

by IRANdokht on Mon Nov 16, 2009 05:33 PM PSTNiki jan I am so glad to hear the good news! You know you have to eat what you crave now so lets see, the best tongue I found was in a Jon's market in Glendale (Glenoaks Ave right off 5)
Make sure to cut the parts closer to the throat off and discard them, soak the tongue in ice water for hours and change the water a few times too, it'll get rid of a lot of the smell that Anonymouse is trying to cover with garlic and onions ;-) After it's cooked, remove the skin.
Let me know if you don't find it and/or want someone else to make it for you. I have a few days off at the end of Nov. anyway :o)

Anyway, finding the tongue is one thing cooking it is another since it is tough and takes a while to cook. I cook it in pressure cooker with onions and garlic or other condiments as you like. The pressure cooker should have the time but I think it is something like 30 - 45 minutes.
You can also get is as sandwiches in some Iranian stores or restaurants and they are grrrreeeaaaat!
