Another tried and true recipe

2 lbs of 20-22% fat beef (cow since we don't have Irooni goosfands in LA)    normally 1/3 lbs per 1 skewer    so 6 seekhs of koobideh

1 medium onion  (randeh beshe)

1 table spoon lemon pepper

1/2 tea spoon black pepper   1 tea spoon salt     3/4 teas spoon tumeric

mix all ingredients for 10-15 minutes, let rest in ROOM TEMP for 1 hour .....work the mixed meat another 5 minutes ..... put on seekh .... let sit for 1 hr 

 
make sure fire in the grill is VERY hot ..... place skewers on the fire and rotate every 10 seconds for the first 2 minutes .... leave on the grill as per taste    reyhoon mandatory   vodka optional

this is very interesting that you posted this video.  I have been looking everywhere to learn how to make kababe barg. I need to know what kind of meat to buy, how to marinate, what size to cut each piece and how to make it  nice and flat as you get them in restaurants. can you or anyone help?
