Baghala Ghatogh

If you are from Gilan or Mazandaran and you already know how to make Baghala Ghatogh, please turn around and ignore this blog!  Chances are you would not approve of the way I prepare this alltime favorite of the Northern cuisine!  Afterall, I have seen people from Gilan and Mazandaran labor away at gathering and preparing the ingredients of this dish and I know they wouldn’t approve of the lazy person’s easy way out!  For the rest of you who might want to try cooking this simple, healthy, and delicious meal, I have a super easy recipe which can be prepared in less than one hour.  Baghala Ghatogh is also a superb vegetarian dish.  You can see what the original recipe entails here.

Ingredients:

  1. Frozen Baby Lima Beans:  4 cups or two packages (2 lbs. total)
  2. Minced Garlic: 3 tbspns.
  3. Dried Dill: 4 tbspns. (you may also use 8 tbspns. of fresh chopped dill)
  4. Eggs: 3
  5. Butter:  1/2 stick (or cooking or olive oil 1/2 cup)
  6. Turmeric:  1/2 of a Persian teaspoon (not to be mistaken with an American teaspoon which is bigger)
  7. Salt and Pepper:  To taste
  8. Water:  3 cups

 

Directions:

  1. Fry the minced garlic in butter or oil. 
  2. Add turmeric.
  3. Add lima beans and stir for 5-10 minutes.
  4. Add dill.
  5. Add salt and pepper
  6. Add water.
  7. Cover and let it cook on medium heat for 25-30 minutes.
  8. Break the eggs in a small bowl and stir.  Add eggs to lima beans, stir, and cover for 10 minutes. 
  9. Serve with rice (kateh-style), or bread.
