LUBIA POLO

Can anyone help me please.  Yesterday I attempted to make Lubia Polo from a recipe I found on the internet but all my efforts were wasted as the final outcome was stodgy and there was no tadiq :(   I have eaten Lubia Polo before and it was very delicious but mine certainly was not!  

 

 Does anyone have any advice on where I might be going wrong please?  I would love to have a great recipe if you have one.  It is my aim to make a video of lubia polo for Youtube so that other people can enjoy to make it too.

As this is one of my favorite dishes and have experienced the frustrations that you are having now, I feel compelled to share with you my recipe.

It begins by preparing the 3 key ingredience separately and then putting them together in sequence. The ratios of these ingredients are also kept simple because I like to remember them!

Lean stew meat - 1 Ib
Frozen french green beans - 1 Ib
Onion - 1 medium size
Tomato paste - 1/2 can (small can)

Preparing the meat
- chop onion and saute in a non-stick pot with oil
- add tumeric to onion and continue to saute
- remove the above mix from pot and set aside
- saute chopped meat in same pot with oil
- add above onion mix to meat and add hot water to cover mix
- turn up heat to boil and then turn down heat to cook meat


Preparing the beans
- cut french beans to size (2x the length of those shown in picture)
- saute in a pan with oil until the color begins to darkent and they soften
- add cinnamon to taste - no more than a tea-spoon though
- add tomato paste and now turn up the heat a bit to saute the mix


Preparing the sauce
- add the prepared beans in the pan to the cooked meat in the pot
- allow heat and time to blend
- at this time everything in this mix should be fully cooked so that you can eat it by itself

Preparing the rice
- cook rice the normal way but drain it with a harder core than usual as the juice from the sauce will soften it.

Mixing the rice with the sauce
- in a large bowl begin mixing the rice and the meat/bean sauce in small portions
- my preference is to have more of the meat/bean sauce than rice
- save some white rice for the tahdig base if you decide to skipe the potato tahdig

Steaming the final mix
- using a non-stick pot, cover the base with a thin layer of oil and then spread the white rice you saved from above on the base.
- the layer the rice mix with the bean/meat sauce in the pot
- start with medium heat and then go to low and allow time to steam - I recommend at least 30 to 40 minutes
- the low temp will give you a golden crispy tahdig without burning it - tomato sauce burns at even medium temps.

You are welcome - just one edit!
for every pound of meat you should use 3/4 pound (12oz) of frozen french beans - not 1 pound. I looke at the bag today and noticed that it is 24oz and I use half of it.
The french beans are thinner much better.

Any attempts otherwise is will be disapointing by comparison!

Oh I forgot, most people including myself prefer the cut stew beef instead of ground beef. So use stew beef instead of ground beef and it's better. Though either one works. Don't know why I said use ground beef!

Here I'll tell you the easiest recipe. The recipe doesn't have to be complex, start easy and as you get better you can add your own touches. So here it goes:

Do you know how to use basmati rice and make good Persian rice? If so, good. If not, learn that first. I'm gonna assume you know how to cook Persian rice.

For the lobia polo portion; chop a medium to large onion in small pieces. Put some oil in a pan amd saute the onions a little. Take a pound of ground beef and mix it with the suate onions and saute them together until the beef is brown.

Once the beef mix is brown, put the beef in a pan. Open a can of cut green beans, drain the water and throw in in the pan and mix with beef and onions. Add about 2 cups of water to the pot. Add one large spoon of tomato paste to the mix. Turn the heat and let the pot and ingredients in it cook for about 10 minutes and then lower the heat and let it simmer. Now your "sauce" is ready.

Next you need to cook your Persian rice. I'm not gonna explain that because I don't feel like it! Once you drain the rice and put it back in the pot to steam and get ready, now it's the time to add your "sauce" to top of your rice, close the lid and let it simmer for about 20 minutes or so.

Once the rice cooking is done, mix the sauce and the rice together and serve. As for tah-dig learn the rice cooking first and the tag dig can come to you later. So basically the lobia polo is the mixture of rice and the "sauce". You cook them separately and then mix them together.
