Yakh dar behesht
by Party Girl on Tue Oct 14, 2008 08:26 PM PDTThere are two distinctly different food items called "yakh dar behesht." One is the iced drink very similar to "Icee," which is made with crushed ice and fruit syrup. In Northern Iran this is a favorite dessert.
There is another "yakh dar behesht" which the cook in this video is making. This, too, is a desert very much like "Fereni" or when it's made thick, it resembles "masghati." The recipe for the kind in the video can be found here:

مسقطی و یا لوزی که بعد از سفت شدن آنرا بصورت لوزی میبرند. آنچه در زمستان میخورند "لرزانک" است و همینطور برف وشیره. یخ در بهشت مال تابستان است.

He had this cart with a bucket in the middle full of some secret liquid (made up mostly of dye, sugar, and Joob water probably!). The bucket was embedded within a bed of salt inside a larger bucket. He would twirl the inner bucket against the layer of salt surrounding it. Soon the liquid would jell up, and 2 rials later there I was: crunching and gulping Yakh Dar Behesht, getting a blinding brain freeze, and being the coolest 15 year old, literally!
