Koobideh baad regime!

Someday we should sort out the best expat chelo kababi in the world. The ones in San Francisco are pretty good, but there's a lot more choice in LA. Don't know the scene in Europe. Quality of doogh, type and freshness of bread, etc, and even the type of music makes a difference (Googoosh for lunch, Shajarian for dinner or during tea).
Mehrban, the Mcgurk effect is improperly called "an illusion," as though there is a right syllable and a wrong one. Yet both versions (eyes open or ears only) are perfectly valid experiences for forming an opinion as to what the man in the video is saying. A person would stand strongly by his opinion, to the point of denying that it is an opinion at all because it is what the person really hears--and the opponent would stand just as strongly against. The video allows us to go back and forth between the two experiences--delivering an insight not normally available in disputes where the opponent's perceptual context is not readily available to us--say by simply closing our eyes.

ایرانی فقط برای همین چیزها هم خوب است. رقاص بازی و چلو کباب خوری. بلاگ که درباره چلو کباب نوشته میشه همه سرازیر میشند و کامنت میزارند.
اگر به اندازهٔ یک هزارم عشقمون به چلو کباب غیرت و شجاعت داشتیم (مثل مردم مصر و لیبی و تونس و یمن) الان جمهوری اسلامی سرنگون شده بود.

by Esfand Aashena on Thu Mar 24, 2011 09:54 AM PDTI used to be 100% Soltani but the past several years am sticking with chicken mostly, Barg once in a while. Koobideh (never alone) as part of chicken soltanti or soltani about once every two weeks or so.
Also, Salmon kabobs in Iranian restaurants are pretty good! You can have them with salad or sabzi polo or regular polo.
Come to think of it Iranian restaurants in US are much better (1000% better) than how they were about 20 years or so ago. In the early days it was like having meat with rainbow spices and throw in all they could! You couldn't taste what the hell you were eating!

Souri jan, what a funny comment. Between all the talk about Koobideh or Barg, with yours, we were transformed to another world. But somehow now the images are all superimposing. The sophisticated lady and the passionate chubby one are both eating a lot of kabob and all sophistication is lost and the passion is only in th eating. Sorry, all the comments are mixing now.

Koubideh = Greasy but tasty!
Barg = Healthy but fade!
I go for the taste, no matter how greasy it might be ;-)
It is like choosing between two women : one with a very sophisticate and good manners but who can't handle your passion and craziness for a wild life enjoyment, or a chubby but happy and easy going woman who will love you and share your passion for everything you like.
Depending on your own needs and motivation, you will choose one of them......(or both if you are lucky and can afford it)
Therefore, a Soltani is the best option, I think!

خوش ایّامی بود آن زمان که بساط کباب و شراب را دار عمارت عالم میکردند و ما یادمان هست که تا چند کوی و چند منزل این بوی کباب و آن ذغال جکسون اشتهای هر جنبنده یی را باز میکرد.
ما هیچ وقت نان از بیرون تهیه نمیکردیم تا زمانیکه مرحوم پدر بزرگم دار قید حیات بود ،آن چنان نای میپختند اهل منزل که کباب را دار آن میگذاشتی و ما دوست داشتیم یک و یا دو گوجه قرمز را لای نان و کباب بگذاریم و چند پر پیاز را به سق کشیده و ماست و خیار به همراهش مزه کنیم، دوغ را هم دار مطبخ درست میکردند که ماست خانگی بود و چند سیر سبزی دار آن میریختند و یک ضرب و یک نفس آن را سر میکشیدیم.
تا همین چند سال قبل از انقلاب چلو خوری به همراه کباب به شهر ما نیز آمد ! و گرنه خنده دار بود که کباب را با برنج خوری (این رسم برنج خوری ،چلو خوری به همراه کباب از طبقه عوام برخاسته بود.) و دوستان قفقاز خانوادگی ما این رسم را مضحک میدانستند و به دور از شئن کباب خوران داشت قزاق و داغستان !
این اواخر دوست داشتیم به کبابی تجریش و و بازار سر زنیم و دلی از عزا دراریم... میچسبید با دست کباب به نیش کشی و با دست گوجه خوری و پیاز و سالاد شیرازی دار آخر ! یک لیوان هم بستنی اکبر مشتی و دو چای لیوانی هم که دیگر ۱۰۰% بود.

ما چند سالیست که گوشت (گاو،گوساله،مرگه و گوسفند و خوک و غیره...) نمیخوریم، تنها ماهی و آنهم به روش ژاپنی و ایضا گاهگداری دوست داریم ماهی کباب خوریم و به یاد ایاّم خوش و تفریحات خانوادگی و گریزهای نوجوانی و جوانی جعفر آباد و جاجرود و فرح آباد !
امید است که دوستان چندان فشار به اینجور کباب آلات نیاورند که دشمن سلامتی است و ضرر عمر !

As for joojeh koobideh if it is the spicy ground chicken, lately I've tried them and they seem ok. They taste better than they sound!
I must be missing something about making barg at home. I've done kabob turki, kabob torsh and chenjeh, but never barg! Always koobideh but never barg! Oh well.

My vote is for Joojeh Koobideh and extra grilled tomatoes.
Soltani (combination sheep and cow!) is a little bit too much for lunch and I agree with Hamsade that Barg is better at home and Koobideh at the restaurants.

Granted we have bad restaurants but good restaurants pride themselves on the quality of the barg! Not chenjeh by the way.
As for koobideh it is ground beef with onion mix and basically flipping hamburgers, now how hard is that?!

There are so many Iranian and non-Iranian dishes that chelo kabob is now just one of them, although when you go to Iran it seems to be the only choice available!
Getting close to lunch and Ari's blog photo is making me extra hungry!
