Dear Chef KShar:
by Bavafa on Thu Nov 04, 2010 08:11 PM PDTyes, it was a joke and did not mean any thing negative. My wife often jokes about deep fried cooking, and she says that even her "lenge kafash" if it is deep fried, it taste good.
Thanks again for your helping the community

by Chef KShar on Thu Nov 04, 2010 06:41 PM PDTmehrdad jon, " lengeh kafsh" whatever........ loved your joke, it is a joke isnt it? Let me know how yours turned out and if you need help let me know. I always use the chicken broth to do Ash or soup, try it. You can freeze the broth and use it when you need it.
Chef Kshar jaan: First love you kitchen
by Bavafa on Thu Nov 04, 2010 01:34 PM PDTPerhaps next time you can invite us all so we can give our opinion based on taste :) But I am sure it all very tasty and great. After all, with so much cooking oil, one can cook my 'lengeh kafsh' and still taste good.
On Tahcheen, I had never had it with onion, I should and will try it next time I make it to see how it will turn out. Likewise, I have not had Ashe reshteh with chicken broth, I make mine with some 'dandeh gosfand' the fatty part. My friends don't know about it and thinks I am just a good cook, if he know how fatty those 'dandeh' are :)
Anyway, great job. I enjoyed it.
Mehrdad
Thanks!
